Maillet began racing in 2004, at the age of 33. She took part in a number of events, including the 25 Heures VW Fun Cup in 2006. Maillet drove for the Racing Club Partners team, which she and Dubois owned, in the NASCAR Whelen Euro Series championship for three seasons under a Luxembourgish racing licence.
She raced in the top Elite 1 class for two seasons before dropping to the Elite 2 class in 2014 after her team merged with Marc VDS Racing Team. She finished eighth in the Elite 1 class in the first race at Spa-Francorchamps in 2012, and sixth in Elite 2, which she achieved twice at the Nürburgring and Circuit Bugatti. She finished 12th in the championships her best season, a feat she accomplished in all three seasons she competed.
Maillet retired from racing at the end of the 2014 season and began working as a promoter. She helped organise and promote the American Festival Finals at Circuit Zolder, which was added to the NASCAR Whelen Euro Series calendar in 2015 and will remain on the calendar through the 2022 season. She took over as Director of the Circuit de Spa-Francorchamps in Belgium in June 2016, succeeding Pierre-Alain Thibaut.

Maillet and her partner, Ann Lawrence Durviaux, were found shot dead at their home in Gouvy on August 15, 2021. She was discovered after missing a scheduled appearance at the Ypres Rally that year. According to the investigation, Dubois committed the murders and then committed suicide after calling the police.
